Pad See Ew, Nudelgericht

Zutaten für 4 Portionen

  • 400 gr. Chinakohl (Bok Choy) oder Brokkoli
  • 500 gr. flache und breite Reisnudeln
  • 300 gr. dünn geschnittenes Schweinefleisch
  • 130 gr. (2 Tassen) Sojasprossen
  • 3 EL dunkle Sojasauce
  • 2 Eier
  • 3 Zehen gehackter Knoblauch
  • 3 TL Zucker
  • 3 EL helles Sojaöl (oder Olivenöl)
  • 2 EL frischen Zitronensaft
  • 2 prisen weissen Pfeffer

Zubereitung

Reisnudeln für 10 Minuten in Wasser einlegen, danach noch für etwa 2 Minuten kochen lassen so dass Sie noch etwas Biss haben. Beiseite stellen.

Erhitzen Sie 3 EL Sojaöl in einem Wok bei hoher Hitze und fügen Sie dann den gehackten Knoblauch dazu und rühren das ganze gut um. Nun kommt das in Scheiben geschnittene Schweinefleisch dazu und lassen es leicht anbraten.

Schweinefleisch mit Knoblauch an den Rand des Woks schieben und die Eier im Sojaöl anbraten. Sobald die Eier leicht angebraten sind das Fleisch darunter mischen. Jetzt das Bok Choy (Chinakohl) unterrühren und kurz anbraten. Nudeln dazu geben und nochmals alles gut unterrühren.

Das ganze mit der dunklen Sojasauce und dem Zucker abschmecken. Ganz zum Schluss  den Wok von der Hitze nehmen und die Sojasprossen dazugeben und unterrühren.

Zum servieren mit etwas Pfeffer bestreuen. Dazu die üblichen Nudelgewürze, Zucker, Fischsauce, Essig und getrocknete und gemahlene Chilis.

Tipp

Für eine vegetarische Version nehmen Sie anstelle von Schweinefleisch festen Tofu. Es kann auch ganz auf Tofu verzichtet werden. Das Pad See Ew wird dann nur mit Ei genossen.
